Yummy Chicken Biryani

This is my first post and I wanted it to be special so I'm starting with one my Favorite dish the 'Chicken Biryani'. Its important to remember to marinate the chicken before starting the process of making the Biryani.

Chicken Marination:
Ensure that the chicken is marinated for 6 hours before the preparation of making the birayni. You can use any curry paste you know. 



Ingredients:
Spices needed
  • 1 bay leaf
  • 3 cardamom pods
  • 1 small cinnamon stick
  • 4.92 ml turmeric
  • coriander, chopped
  • sliced almonds
  • 85 g raisins
Rest of the Ingredients 
  • 300 g basmati rice
  • 25 g butter
  • 1 large onion, finely sliced
  • 4 chicken breasts, sliced
  • 59.16 ml curry paste
  • 850 ml chicken stock

Chicken Briyani Preparation:

Step 1: Wash the rice till the water runs clear
Step 2: Heat butter in a saucepan and brown the onions 
Step 3: Pound the Bay leafs, cardamom pods and cinnamon stick to a powder. 
Step 4: Mix the powder with the onions for 10 minutes. 
Step 5: Sprinkle in the turmeric and mix for 3 minutes 
Step 6: Add the marinated  chicken and if there is any extra curry paste add along ; cook till aromatic
Step 7: Add the rice into the pan with the raisins and then pour over the stock
Step 8: Hard Boil for 5 minutes then lower the heat to a minimum and let it cook for 7 mins.
Step 9: Turn off the heat and leave for 10 mins.
Step 10: Before serving scatter the Almonds and Coriander
