Tasty savory Rasmali

Rasmali is a traditional Indian dessert usually served after a meal. Originating in the North of India it now is prepared and adopted by all regions of the country. The process of making Rasmali is long but when done is a delightful dessert to serve. Enjoy making this and let me know what you think.




Ingredients

  • Paneer (Cottage Cheese) - Prepared from Cow Milk - 200 gms
  • Sugar - 800 gms
  • Water - 3 1/2 cups
  • Milk - 1 liter
  • Saffron - 1 tblspn
  • Blanched and sliced almonds and pistachios - 2 tblspn each


Perpetration

Step 1: Knead the paneer into to a smooth dough
Step 2: Make balls and flatten
Step 3: Prepare Sugar syrup by mixing the 500 gms of Sugar into the water. Boil and stir the mixture till it becomes a syrup
Step 4:  Add the flattened panner into the sugar syrup and cook for atleast 15 mins
Step 5:  Turn off the gas and leave the paneer in the syrup for upto 7 hours
Step 6:  Boil the milk until the water evaporates and the milk is half its original quantity
Step 7: Add a bit of saffron and the remaining sugar and stir well till all is dissolved.
Step 8: Remove the paneer from the syrup and squeeze till excess syrup is drained.
Step 9: Dip the paneer in cold water  and squeeze again.
Step 10: Add the paneer into the milk and cook for another 5 minutes.
Step 11: Leave to cool and refrigerate.
Step 12: Before serving ensure to garnish with the Almonds and Pistachios. Serve chill.
