The Powerful Pav Bhaji (Indian Snack)

Pav Bhaji if literally translated would be 'Bread Vegetable'. However what is really is, is a fusion of 6 different vegetables mashed together with spices added to allow the person the experience a unique taste like non-before. The bhaji (vegetable) is served hot along with bread which is usually toasted with butter. I hope you have fun making this recipe and let me know what you think.
Servers - 6 people

Ingredients:

  • Finely chop:
                   1 cup green beans (coffee sized mug)
                   2 cups cauliflower (coffee sized mug)
                   1 carrot
                   2 medium onions
                   2 medium tomatoes
  • 2 medium potatoes, boiled, peeled and mashed 
  • 1/2 cup green peas 
  • 1tbsp ginger paste
  • 1 tbsp garlic paste 
  • 1-1/2 Pav Bhaji masala,
  • between 1/2 to 1 tbsp of chili powder
  • 2 tbsp canola oil
  • Lime wedges for Garnish 
  • Cilantro for Garnish

The ginger and garlic paste along with the Pav Bhaji masala can be purchased from any local Indian Store.

Procedure:


Step 1: Pressure cook green beans, cauliflower, carrots, and peas with 1 cup water and 1 tsp salt.
Step 2: Mash the vegetables and mix in the mashed potatoes.
Do not grind it into paste. The mixture should be coarse
Step 3: On medium heat, heat oil in  a pan.
Step 4: Add 1/2 of the chopped onions (reserve other half for garnish), ginger and garlic and saute' until soft and translucent.
Step 5: Add tomatoes, chili powder,  and Pav bhaji masala and saute' for 4-5 min.
Step 6: Add vegetable mixture and saute' for 2 min.
Step 7: Add some water to make the consistency like chili or thick soup. Adjust salt to taste.
Step 8: Increase the heat to high, bring to boil, then lower the heat to low and simmer for 15-20 min.
Serve in a bowl topped with some onions, cilantro leaves and lemon wedges.
Serve along with toasted dinner rolls or burger buns or even Slice bread (buttered )
